Ingredients:

- ½ cup granulated sugar (adjust to taste depending on berry sweetness)
- 2 tbsp cornstarch or all-purpose flour
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 1 cup plain Greek yogurt (full-fat or 2%)
For assembling:
- 1 egg (beaten, for egg wash)
- 1 tbsp milk or water (for egg wash)

Prepare the Crust:
- In a large bowl, mix flour, sugar, and salt. Cut in the butter using a pastry cutter or fork until the mixture resembles coarse crumbs.
- Add ice water, a tablespoon at a time, until the dough just comes together.
- Divide the dough into two disks, wrap in plastic wrap, and refrigerate for at least 1 hour.
